Shredded Carrot Salad

I find this salad is especially popular with children.

Ingredients:

For 2 servings:

200 g (7 oz) carrots

1 Tbsp oil

1 Tbsp lemon or orange juice

1 Tbsp very finely chopped parsley, spring onions, basil, dill or other herbs

sugar and salt to taste

Pumpkin and Bacon soup

Just what you need to cheer yourself up in the middle of winter! What's more, this pumpkin soup is easy to make and inexpensive.

Inredients:

For 3-4 servings;

1 tsp oil

1 rasher bacon, chopped

1 large onion, chopped

2 cloves garlic, chopped

660 g (1 1/2 lb) pumpkin

2 cups (500 ml/16 fl oz) water

1 small chilli (optional)

about 1 cup (250) ml/ 8 fl oz) cream

juice 1/2 lemon
