Although, it may sound un-Pinoy, i'm making sure that this food would be palatable and savory to any taste bud. This one is best served with coffee. So Pinoy!

Ingredients:

* 1 square loaf of bread (sliced bread)

* 2 eggs

* 1/4 cup milk

* salt & pepper

* butter

* cheese (optional)

Although many think of macaroons as a combination of ground almonds (or paste) and egg whites, here in the Philippines we like our macaroons to contain sweetened coconut. Bite into one of these sweet tasting gems, still warm from the oven, and you will enjoy the contrast of a crispy exterior to a soft and chewy, coconut flavored interior.

COCONUT MACAROONS INGREDIENTS:
(This can cook 2 dozens)

  • 2 cups confectioners' sugar (500 ml)
  • 2 1/2 cups finely shredded coconut (625 ml)
  • 4 eggs whites
  • 1/2 cup whipping cream (125 ml)
  • 1 tsp vanilla extract (5 ml)
  • pinch of salt
