Thai’s Red Chicken Curry

For those who loved spicy dishes you may try my version of Thai's Red Chicken Curry ![]()
i love spicy food !
Ingredients:
3/4 kilo breast chicken fillet cut into bite size (we usually buy the ones from Magnolia chicken cuts at the grocery) or menudo cut chicken pieces
Thai Foods Red Curry Paste ( if you do not have Thai Foods Red Curry Paste you may try tomato paste and chili, sauce & curry powder mix , this is what I do at home )
red & green bell peppers ( julienned )
young corn
Paminta leaves
Fish sauce or patis ( or soy sauce will do )
spring onions
onion (chopped)
ginger ( julienned )
freshly squeezed coconut milk or 1 can of coconut milk
oil
How to cook chicken caldereta
Kaldereta or caldereta is not the usual way of cooking chicken, Pinoy chicken stews are normally cooked adobo, afritada or pininyahan. Of course, chicken can also be cooked as kaldereta and it is equally tangy delicious if done right.
On my chicken kaldereta I used chicken wings, I find chicken wings the tastiest part and it’s ideal for my version of kaldereta. You can choose whatever part of chicken you prefer. This is still a guaranteed tasty chicken caldereta.
Ingredients for Chicken Caldereta
- 1 chicken (1 kilo)
- 1 can liver spread or
- 1 cup lechon sauce
- 1 small can tomato sauce
- 3-4 pcs. sweet whole pickles (sliced slanting by, 1/4′ thick)
- 1/4 cup pickle sauce
- 2 bell pepper (red & green, strips)
- 3 onions (quartered)
- 4 Frankfurters or sausage (sliced slantingly, 1/4″ thick
- 1/2 head garlic, minced
- 1/4 cup vinegar
- 2 tbsp. soy sauce
- 1 tsp. salt
- 1 tsp. ground pepper
